Cold Sesame Peanut Noodles

These delicious noodles are the perfect comfort food, summer or winter!
Ingredients
- 16 oz lo mein or pancit noodles
- 1/4 cup creamy peanut butter
- 1 T ginger minced
- 3 T Toasted Sesame Oil
- 1/3 cup soy sauce
- 1 1/2 oz sake
- 1 T or more tt sambal oelek
- 2 T sugar
- 3 T tahini
- 1/4 cup scallions sliced on bias
- 1/2 English Cucumber julienned
- 1/2 Red bell pepper julienned
- 1/4 cup roasted peanuts chopped
Instructions
- Cook noodles according to package directions, drain and set aside to cool.
- Prepare peanut sauce by combining peanut butter, ginger, toasted sesame oil,, soy sauce, rice vinegar, sake, garlic chili paste, sugar, and sesame paste or tahini in large bowl. Whisk to combine well and adjust seasonings to taste.
- Add scallions, bell pepper and cucumber to bowl with the sauce. Add noodles to the bowl. Toss to combine well, then adjust seasonings to taste. Garnish with roasted peanuts.
- Note: Dish can be made one day ahead and kept covered, refrigerated. Chili paste becomes hotter as it sits, so adjust heat accordingly.
