Cold Sesame Peanut Noodles

These delicious noodles are the perfect comfort food, summer or winter!

  1. Cook noodles according to package directions, drain and set aside to cool.
  2. Prepare peanut sauce by combining peanut butter, ginger, toasted sesame oil,, soy sauce, rice vinegar, sake, garlic chili paste, sugar, and sesame paste or tahini in large bowl. Whisk to combine well and adjust seasonings to taste.
  3. Add scallions, bell pepper and cucumber to bowl with the sauce. Add noodles to the bowl. Toss to combine well, then adjust seasonings to taste. Garnish with roasted peanuts.
  4. Note: Dish can be made one day ahead and kept covered, refrigerated. Chili paste becomes hotter as it sits, so adjust heat accordingly.
