Asian Shrimp Lettuce Cups

No time? No problem! These delicious and healthy lettuce cups take just minutes to prepare and everyone will love them! Swap the shrimp for ground chicken or turkey or even some steak to change it up!
Ingredients
- 1/2 cup Hot House Cucumber finely chopped
- 1/2 cup scallions, white and green
- 3 T white miso
- 2 t ginger finely chopped
- to taste Kosher salt
- 1 medium Serrano pepper seeded and minced
- 1 pound shrimp, 21.25 peeled and deveined, tail off
- 1 head butter lettuce or iceberg leaves separated
- 1/4 cup roasted peanuts chopped
- 2 T Fresh mint chiffonade
- 2 T asian sweet chili sauce
Instructions
- Toss the shrimp with the Serrano pepper and season with salt. Set aside at room temperature.
- Combine cucumber, scallions, miso and ginger in a bowl. Season to taste with kosher salt.
- Heat a dry sauté pan over medium high heat and cook shrimp until cooked through. Remove from pan, cool slightly, then coarsely chop
- Place coarsely chopped shrimp in the bowl of the cucumber mixture and toss to coat. Season to taste.
- Divide the shrimp mixture among the lettuce cups. Garnish with peanuts and mint. Drizzle with Asian Sweet Chili Sauce.
